Now that I'm living on my own, I've been doing quite a bit of cooking lately. I've also rediscovered my light box, and decided to put the two together by starting "Tasty Tuesday," where once a week I'll share a yummy recipe and practice my food photography while I'm at it. This week has been cold and snowy here in northern New Hampshire, so I opted for a tropical treat. I found this mousse recipe on the back of my Bob's Red Mill fine macaroon coconut bag and decided to try it out.
I made it my own by using evaporated coconut milk and adding shredded coconut at the end and dusting with cocoa powder. (And instead of placing the mousse in the freezer, I just stuck the bowl in the snow!)
