Several years back, I visited a family friend in South Carolina. She made spinach squares one night, and they were sooooo good. About a year ago, my boyfriend, Shelby was heading to France. I wanted to make him something special right before he left, and thought Fancy Nancy's spinach squares would be the perfect choice. He suggested we add more vegetables, which made them even better. This past weekend, we decided to re-make the recipe, and instead of two cups of cheddar cheese, we replaced one cup with Monterey Jack. It added a little kick!
The squares are thin enough to be cut into bite sized pieces and served as an appetizer, but we've been cutting them larger. They're fantastic for breakfast, and incredibly filling!
